chickpea summer salad

get ready for the warm weather with this fresh summer salad - a bbq essential!

Ingredients: (4 servings)

  • 1 can (15.5oz) chickpeas, rinsed

  • 1 avocado

  • 1/2 cucumber

  • 1/4 cup shaved brussel sprouts

  • 1/2 cup cherry tomatoes

  • 1/4 red onion

  • 3 tablespoons red wine vinegar

  • 2 tablespoons extra virgin olive oil

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2-1 lime, juiced (depending on size)

  • 1/8 cup chopped parsley

Directions:

  • Rinse one can chickpeas to remove excess sodium!

  • Chop cucumber, tomatoes, avocado, red onion, parsley and add into bowl with rinsed chickpeas.

  • Add in shaved brussel sprouts, red wine vinegar, olive oil, garlic powder, salt, black pepper - and mix it up!

  • Juice lime into mix.

  • Finally, add in fresh avocado - I save this step for last so it does not become mushy!

  • More seasonings can be added based on taste - personally, I love the freshness and simplicity. Enjoy!
