strawberry banana muffins

inspired by the lovely @erinliveswhole, these muffins are to die for! the texture is like biting into a cloud and the taste is out of this world. let's get baking!

Ingredients: (12 muffins)

  • 1.5 cups whole wheat flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 2 teaspoons cinnamon

  • 1/4 teaspoon salt

  • 2 eggs, room temperature

  • 2 ripe bananas, medium

  • 1/3 cup maple syrup

  • 1/2 cup coconut oil, melted & cooled

  • 1/2 cup cashew yogurt

  • 1 tsp vanilla extract

  • 1 1/2 cups fresh strawberries


  • Preheat oven to 350F and take eggs out of the fridge.

  • Combine dry ingredients in a bowl; whole wheat flour, baking soda, baking powder, cinnamon, and salt.

  • In a separate bowl, mash bananas until smooth. Whisk in eggs, honey, cooled coconut oil, cashew yogurt, maple syrup, and vanilla extract.

  • Fold in flour in segments, but do not over mix!

  • Once mixed, fold in chopped strawberries. 

  • Fill greased muffin tin with mixture, and top with some extra strawberries to make them beauties!

  • Bake for 18-20 minutes and BOOM! beautiful strawberry banana muffins!
