vegan mac and cheese

does dairy make you feel sluggish and bloated? me too.

try this irresistible vegan mac and cheese! inspired by the lovely cookie+kate.

Ingredients: 4 servings

  • 2 tablespoons of olive oil

  • 1 small yellow onion

  • 1 cup grated potatoes

  • 4 cloves of garlic

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1 teaspoon mustard

  • 1/2 teaspoon sea salt

  • 2/3 cup soaked cashew

  • 1/4 teaspoon red pepper flakes

  • 1/2 cup nutritional yeast

  • 2 teaspoons apple cider vinegar

  • 1 cup water



  • In a medium saucepan, warm the olive oil over medium heat. Add chopped onion and stir until onion is translucent.

  • Add in grated potato, garlic, onion powder, garlic powder, mustard, sea salt and red pepper flakes. Stir for about a minute.

  • Add in water and soaked cashews. Let mixture simmer for ~8 minutes or until potatoes are completely tender.

  • Add mixture into food processor. Add nutritional yeast, apple cider vinegar and additional water as needed (depending on how thick you like it). 

  • Taste and add additional salt or nutritional yeast as needed. I love the flavor of nutritional yeast so topped my pasta with extra.

  • Add sauce to pasta and add some broccoli for a little extra fiber!
