mexican breakfast tacos

jazz up your morning routine with these simple, yet delicious egg tacos.


  • 2 whole-wheat tortillas

  • 2 eggs

  • 1/2 tsp garlic powder

  • pinch of salt/pepper

  • 1/4 cup black beans

  • 1/8 cup cabbage

  • 1/8 cup cherry tomatoes

  • 1/8 red onion

  • 1/4 avocado

  • 1/2 lime

  • 2 tablespoons of my cilantro lime dressing (optional)

  • 1 tsp hot sauce


  • In a bowl, crack 2 eggs and add garlic powder, black pepper, and salt. Whisk together eggs, and add to a heated pan.

  • While eggs are cooking, chop cabbage, tomatoes, and red onion. 

  • Rinse black beans to remove all excess salt!

  • Lay out 2 tortillas, add scrambled eggs and top with black beans, cabbage, tomatoes, red onion, and avocado.

  • Add drizzle of hot sauce and cilantro lime dressing! Bon appètit!
